Verde can refer to different agave in different places (mostly connotating vibrant green flesh of the leaves, or “pencas”); in this case, it is Agave salmiana, a larger variety often associated with the state of San Luis Potosí. The name is apt: the variety is beloved for its distinctive bell pepper, green chile aromatics. Around the capital of Durango, this Verde grows in ancient black lava fields, and is much smaller than its salmiana cousins across Mexico. Lower sugar yields and sparse population make this mezcal highly limited in quantity.
